How to make sev tamatar ki sabzi?

If you are from Madhya Pradesh, Rajasthan, or Gujarat, you know what sev tamatar ki sabzi (Sev Tameta Nu Shaak in Gujarati and sev tomato curry in English) is; it is made at your home for lunch or dinner, and you absolutely love the taste. But given that you are here, you have probably never made it yourself.

If you are not from any of the states mentioned above, you probably have heard the name or you ate it somewhere, and now you want to make it yourself.

Either way, here is how you make sev tamatar ki sabzi which serves 2-3 people.

Preparation

Chop 3-4 medium tomatoes and 1 onion (optional).

Tadka

Heat 2 tbsp oil. Add 1/2 tsp mustard seeds, ½ tsp cumin seeds, a pinch of hing, and a few curry leaves (optional).

Curry Base

Sauté chopped onions (if using) until soft. Add the chopped tomatoes, 1/2 tsp turmeric, 1 tsp coriander powder, and chilli powder to taste. Cook until the oil separates.

Gravy

Add 1 cup of water and salt. Bring to a boil and simmer for 5-7 minutes.

The Sev

Transfer the curry to a serving bowl. Just before eating, top generously with your Loung Sev or Ratlami Sev. Garnish with fresh coriander.


Enjoy it with chapati/roti or rice on that perfect Sunday afternoon.
